I’m obsessed with Sizzlers and given an opportunity I can have it every day. Today for lunch it was Paneer Shashlik on a bed of herbed rice and topped with BBQ Sauce. Simple, delicious and healthy too. Didn’t add potato wedges as I do t prefer.
Ingredients and spices that need to be Make ready to make Paneer Shashlik Sizzler:
- For For BBQ Sauce
- 1 cup tomato ketchup
- 1 cup water
- 2 green chillies slit
- 1 ” ginger chopped
- 2-3 garlic cloves chopped
- 1 Tbsp onion chopped
- 2 bay leaves
- 1 tsp coarsely crushed black pepper
- 2 Tbsp oil
- 1 tsp mustard sauce or mustard powder
- As per taste Salt
- few coriander leaves sticks
- For Paneer Shashlik
- 200 gms Paneer
- 1 tsp ginger-garlic paste dipped in water
- 1 tsp red chilli powder
- 1 tsp dried oregano
- 2 Tbsp oil
- as per taste Salt
- 1 tomato cubed
- 1 green capsicum cubed
- 1 onion cubed
- For Herbed Rice
- 1 cup cooker rice
- 1 Tbsp butter
- 1 tsp dried oregano
- 1 tsp chopped coriander leaves
- for Sizzler plating
- as required Cabbage leaves
- 1 dollop of cold butter
- 1 Coriander leaves sprig
- as required Boiled peas
Steps to make to make Paneer Shashlik Sizzler
- For BBQ Sauce - in a wok heat oil, add chopped ginger, chopped garlic, slit green chilies. Stir for 1-2 mins. Add chopped onions and fry for 1-2 mins


- Add tomato ketchup, bay leafs, water and stir for 3-4 mins. Add salt and stir on low flame. Add coarsely crushed black pepper and stir. Add mustard powder or sauce and stir. Set aside to cool.



- For Shashlik Paneer - place the Paneer on the kitchen table and cut into cubes. Cut the onion, capsicum, tomato in cubes.

- In a bowl add dried oregano, red chilli powder, salt, ginger-garlic paste in water and mix.



- Add the cubed paneer, tomato, capsicum, onions and marinate well for 10 mins.

- Strain the BBQ sauce and set aside


- In skewers add onion cube first, capsicum cube, paneer cube, tomato cube and do 1-2 sets depending on your grill pan size. The sizes of the cubed vegetables and paneer is very important as the looks does matter

- Set the grill pan on the flame and add oil, gently place the skewers on the grill pan and on low flame grill well until well done. Set aside


- In a bowl to the cooked rice add dried oregano and chopped coriander and a dollop of butter. Keep it ready.

- To plate on the Sizzler add cabbage leaves, plate the rice and add the boiled peas. Add the paneer Shashlik and add the BBQ Sauce. Place a chilled butter cube beneath the cabbage leaves to get the sizzling feature. Enjoy to eat
